Terlano asparagus season from 30 March to 21 May – with the participation of seven restaurants.
In the asparagus triangle Terlano, Vilpiano and Settequerce, from the end of March, the royal vegetable "asparagus of Terlano" is once again the protagonist, at the center of the culinary offer.
Seven restaurants invite you to the traditional Terlan asparagus season, which is celebrating its 40th anniversary this year. Innovative and sophisticated asparagus creations await you on the tables of the participating restaurants.
The week of specialties is organized by the local Terlano HGV Group in cooperation with the Terlano Tourist Association, Cantina Terlano and with the Asparagus Margarete Association of Terlano.
Every day and in all weather conditions, the asparagus of Terlano Margarete are hand-picked in the fields, taken to the "asparagus growers" of Terlano and immediately processed there. This "0 km" cycle guarantees freshness and a unique taste. "Both steamed , boiled, baked or grilled - the asparagus is prepared by our chefs and expertly staged,” says Michael Fontana, president of the local HGV in Terlano. Whether in risottos, creamy soups, pasta specialities, vegetable strudels, egg dishes or with fish dishes - in all these variations the asparagus from Terlano Margarete unfolds flavour above all due to their typical intense and hazelnut-like taste. Even for all those who prefer it in the sweet version, the Terlano asparagus wafers characterize refined and delicious desserts with the noble vegetable.
A total of 13 Terlano asparagus growers cultivate around ten hectares of high-quality asparagus today. “The Margarete asparagus develops an unmistakably mild taste," reports Manfred Koroschetz, coordinator of the Terlaner Spargel Margarete and representative of the asparagus growers.
The excellent "asparagus wine" from the cellar goes well with dishes based on Terlano asparagus. "The asparagus wine is a very digestible Sauvignon, it is bottled specifically for these culinary weeks and is particularly good when combined with asparagus-based dishes", explains Georg Eyrl, president of Cantina Terlano.
Special event
For the 40th anniversary of the "Asparagus Season" the offer includes a very special experience for guests this year.
Wednesday, April 26, 2023 the Cantina di Terlano will be transformed into a culinary table.
After a shared aperitif in this unique setting, an inviting five-course menu and refined dishes from Terlano-born chef Simon Unterholzner, head pastry chef of the two-Michelin starred restaurant Hotel Castel in Tirolo, will be served.
The protagonists on the table, obviously, are the Margarete di Terlano asparagus, accompanied by a sequence of coordinated wines from the Terlano winery. Due to the limited number of participants, registration with the Terlano Tourist Office is required.
Other activities
In addition to enjoying the asparagus, other activities are part of the "Asparagus Season" in Terlano. Everyone can participate in the "Asparagus Culinary Excursion" on April 15, a journey through the asparagus fields with the expert and also taste the creations based on asparagus and the wines of Terlano.
During the asparagus cycle tours on April 12 and May 10, those interested can pedal their bikes from Terlano via Vilpiano to an asparagus field; Terlano wine and asparagus snacks served in the Terlano cellar as well as a typical taste in a restaurant at the end of the trail, enjoying lunch with asparagus.
On 6 and 20 May you can recharge your batteries with "Yoga in the asparagus field" and practice yoga among the asparagus fields. Afterwards, the participants will be able to enjoy a cozy asparagus-based brunch.
